This is the first post of our new creative team member Maria’s Kitchen. This is a decilious and healthy carrot cake decorated with one of our stencils.
To make this delicious carrot cake first we must sieve the flour mixed with the xanthan gum and the baking soda. We will then add the coconut sugar and mix it again.
Next, in a different bowl, we will mix the liquid ingredients: The coconut oil, the bananas, the maple syrup and the vanilla extract and the eggs. Once they are all blended together we can add the sultanas, the grazed carrots and the walnuts and we mix everything again.
Before baking the cake you should baste the mold with coconut oil and heat up the oven up to 180ºC.
Bake the cake for 45 or 50 minutes.
Once we take the cake out of the oven we should let it get cold for a couple of hours. Then we will unmold it and cut it in half horizontally.
We then mix the mascarpone cheese with maple syrup and the vanilla extract by whisking it together. After this we can start spreading the cheese cream making a layer in between the two pieces of cake sponge, and later on the top of the cake.
The cake is now ready. But now comes an important step: the decoration. For this cake I have chosen the camera stencil from Todostencil. To stencil the design on the cream I holded the stencil and sprinkled the cocoa powder over it.
